Nutty Blueberry Protein Balls
Although I wasn’t all that hungry yesterday I decided that it would be a good time to try doing some primal cooking. I picked up the Primal Blueprint Quick and Easy Meals: Delicious, Primal-approved meals you can make in under 30 minutes and decided to give one of the recipes a go.
Apart from using a blender that seems to object to blending, it actually came out pretty well:
Comments asking whether I found them under the sofa or if I was actually going to eat them aside (the answers are no and yes respectively), they taste pretty good. The dates make a good glue and interestingly the failure of the blender to subscribe to its reason for existing added an interesting (if uneven) crunchiness.
Adding in the blueberry really makes the difference though. Even sweet blueberries are sour compared to the sweetness in the dates. So when you bite through these, the blueberries pop and mix their tartness with the sweetness of the dates… The desiccated coconut on the outside is just the icing on the top (pun intended).
Next time I might try less dates and mix in something a little less sweet. I got these ready in time for my family to have for breakfast (and prepared a snack pot for my wife) and so far everyone seems to have enjoyed them.
